
More tender than a silverside joint.
The high quality of our breed and the slow maturing makes this a fine roasting joint.
Ideally the topside joint should be roasted slowly or braised.
When cooked and left to cool, it makes wonderful sandwiches and salads.
Our beef is hung for a minimum of 21 days which allows the meat to tenderise and to lose excess water content. This helps to prevent shrinkage when cooking.
